Bonne Maman Idea and Giveaway!


Even though there is no Bonne Maman store in Thailand, 
I can find Bonne Maman jam in few supermarket in Bangkok. 
The first time I bought Bonne Maman jam because I like the little gingham lids.
After I taste the jam, I like it. Bonne Maman jam is so delicious.
I enjoy eating Bonne Maman jam and get re-useable cute jars after I'm done with the jam.
This is so cool!!

Outside Thailand Bonne Maman is very well known.
There're variety of Bonne Maman products, anyway just the jam has been sold in Thailand.

Try google "Bonne Maman", you'll see so many people blog about Bonne Maman products, 
from how they enjoy eating them to how they re-use the cute Bonne Maman jars.

Mango Fruit Rolls or Preserved Mango


Even though I don't eat ripe mango, I like the preserved mango so much : D

It's easy to find mangoes the whole year in Thailand. Anyway they quickly ripe and spoil.
I thought the preserved mango is the way to keep the much more mangoes to another day.
So I can enjoy the sweety and yummy snack.

It's easy to make preserve mango but it take almost a day to end the process, 
from start to finish. Firstly, simmer mango about 1-2 hrs. Then let it cool. 
After that, make a mango sheet and let it dry in the air. 

That is why I've never made it myself.

I found the easy homemade mango leather in the western style here.

Mango Fruit Leather
ingredients:
6 cups of ripe mangoes
sugar to taste if needed
directions:
1. Blend fruit and sugar (if using) in blender until smooth. 
The mango pulp will make the puree thick. That's okay.

2. Set oven at lowest temperature setting (mine was at 170 F). 
Line two 13 x 18 baking sheet with Silpat mats.

3. Pour fruit mixture onto silpat mats and spread with the back of a large spoon until 
the fruit mixture makes a sheet about a 1/8 inch thick across the surface of the silpat.

4. Place baking sheets in the oven and bake for 6-8 hours, until fruit is dry. 
When you touch it, it should be still a little sticky, but it should be set 
and solid (not wet) like fruit leather.

5. Let fruit leather cool. Once it is finished cooling, gently peel off the fruit leather 
from the Silpat. It should come off the mat easily. Cut small pieces of parchment paper 
(to desired length and width of fruit leather strips you want), then cut fruit leather 
to slightly under the size of the parchment paper. 
Place onto parchment paper and roll together. Tie with a string to hold the roll. 
Repeat with rest of fruit leather. Store in airtight container in a cool space.

Panda Bread


This bread is so cute, right. I’ve never seen any bread like this before and I really want to try out the recipe. The original recipe is from Japanese website: COOKPAD. 







If you can't read Japanese language, don't worry. I got the english version from Florence's blog. 

This is the translated version of TARO's Panda Bread recipe:
Ingredients: <600g loaf (206 x 108 x100h)
230g bread flour
70g cake flour
30g sugar
milk + 1 yolk = 210g (I used skim milk)
4.5g salt
18g unsalted butter (I used 20g)
4g yeast
8g green tea powder dissolved in 10g boiling hot water
8g cocoa powder dissolved in 8g boiling water
Method:
1. Heat up milk and yolk to temperature of 38℃. (I beat the yolk lightly with milk and send it to the microwave on HIGH for 30 seconds).
2. Put everything in bread machine and set to dough cycle. Let it knead for 20 minutes. Stop the cycle and restart the dough cycle and let it knead for another 15 minutes.
3. Divide dough (about 560g) into 3 parts: 75g for the chocolate, 210g plain and the rest of the dough which is less than 280g for the green tea.
4. Add chocolate to the 75g dough and knead till the colour is even. Add green tea mixture to the 280g dough and knead till colour is even. (I did this step manually).
5. Prove all 3 pieces of doughs on separate greased plates covered loosely with oiled cling wrap for 30 - 40 minutes.
6. Punch air out of dough and prove for another 20 - 30 minutes.
7. Use 90g plain dough for the face and 2 pieces of 27g chocolate dough for the eyes. (Refer to photo guide in Step (7) in TARO's site).
8. Fill the hollow of the eyes with 30g plain dough. (Refer to photo guide in Step (8) in TARO's site).
9. Roll remaining plain dough over the patterned dough. (Refer to photo guide in Step (9) in TARO's site).
10. Divide the remaining chocolate dough into 2 pieces (17.5g each) for the ears. (Refer to photo guide in Step (10) in TARO's site).
11. Use 70g of the green tea dough to fill up the hollow between the ears. (Refer to photo guide in Step (11) in TARO's site).
12. Wrap the rest of the green tea dough all around the patterned dough. (Refer to photo guide in Step (12) in TARO's site)
13. Place dough into a well-greased loaf pan and cover it with a lid and prove for 50 - 60 minutes in an enclosed area eg. microwave oven.
14. Bake at 200℃ for 25 – 30 minutes.
Notes:
1. This is not an exact translation of TARO's recipe because I used the bread machine to help me so the first few steps might be different from TARO's.
2. For Step (12), I did not wrap the green tea dough all around the patterned dough. Compare my finished product to that of TARO's, you can see the difference.
3. My first prove is 60 minutes, 2nd prove is 30 minutes and final prove is 60 minutes.
4. I bake at 185℃ for 25 - 30 minutes.

Kaka is Coming Back!!!



No, I'm not talking about a famous Brazilian football midfielder 
nor a famous American pop singer.

I've just found the new design of my favorite snack in the childhood day. 
It's Thailand brand snack called 'Kaka'. It's a crunchy corn snack which has been 
a very popular snack food for over 3 decades. Anyway, popularity has declined 
with today's generation of youths. I've never seen them for long time, 
around 10 years, might be more....    

Today, Kaka is coming back! with so cool new design by Prompt Design. 
Look at their hairstyles which represents each of the corn snack's new flavors, 
caramel corn favor and chocolate favor.

You see, they're so differences. There are lots of changes. 
Today I plan to find them in the supermaket to remind the joy 
of my childhood days...Yummy...

You can find Krispy Kreme in Thailand now!!!



Almost one year after I heard (from reuters) that Krispy Kreme (the American doughnuts brand) award francise development rights in Thailand /--Krispy Kreme doughnut Corporation annouced today that it has entered into an agreement with KDN Company Limited for the development of 20 franchise Krispy Kreme retail shops in Thailand over the next five years.

The Krispy Kreme first branch is opened at Bangkok's Siam Paragon shopping mall yesterday, Sep 28, 2010. With Krispy Kreme advertisement, there're hundreds of people lined up at Siam Paragon since early morning, yesterday to be among the first to try doughnut. The first customer who purchased a dozen of doughnut in the open day got a dozen free doughnuts per week. The second customer got six months of doughnuts. The third customer got three months of doughnuts. The 4th-100th got one months of doughnuts. The 101th-200th got a dozen free doughnuts.
